It is an emulsion based on olive oil, which is used to flavor grilled vegetables and fish, especially with swordfish and tuna fish.

This sauce derived its name from salamoia, that is a salty aqueous solution used to preserve fresh olives from bacteria.

Ingredients

Juice of 2 lemons

1/2 cup Bono extra virgin olive oil

1 teaspoon dried oregano

1 minced garlic clove

2 tablespoons minced parsley

1/4 cup hot water

Fine sea salt to taste

Grinding black pepper

Preparation

  1. Combine all the ingredients except salt and pepper in a bowl and beat them with a whisk until they are well blended, as a creamy emulsion.
  2. Add salt and black pepper to taste.
  3. Keep refrigerated and use to flavor grilled fish.

Advice

If you want to use it for meat dishes, you can replace the lemon with a little vinegar.
